Quick Peas

Peas in Pods—a simple and excellent accompaniment to baked salmon

2 pounds unshelled peas

2 tablespoons water

 

Makes 4 servings

 

Rinse peas; don’t pat dry.  Place peas in a 5-quart pan; add water, cover, and place over medium-high heat.  Cook, stirring well every 5 minutes, until peas are tender to bite (about 15 minutes; shell a few to test).  Pour into a warm serving bowl.

 

Shell peas at the table.  Or, to eat straight from pods, hold a whole pod at one end and put it in your mouth.  Bite lightly at the end you’re holding, and then pull pod through your teeth –peas pop into your mouth.
