Sarah Chan, a native of Trinidad, creates a calypso-flavored spread of Carnival street foods including chicken pelau–a mixed-up pot of rice, peas, and chicken; zesty pineapple chow; and fry bake (traditional fried bread) with buljol (salted cod). Street food is popular year-round in Trinidad & Tobago, and when Carnival comes, it’s an essential part of the party.
