Assefa Kebede, former owner and chef at Vancouver’s award-winning Nyala African Cuisine, shares favorite recipes from his native Ethiopia. Enjoy yedro infele (chicken thighs cooked in red peper sauce), gomen wat (spinach and kale), and, of course, injera, the distinctive sourdough flatbread that accompanies all Ethiopian meals.
