Mexican Kitchen: Enchiladas

Stacked or folded, baked or basted, served with different sauces and fillings–there are endless variations on the enchilada theme. Ana Jackson, a native of Baja, prepares three excellent versions–Guajillo sauce enchildadas, breakfast enchiladas, and authentic Chihuahua-style enchiladas–while sharing tips and ideas on how to customize your own creations.
